The most useful general mountain guidebooks for Scotland are the district guides published by the Scottish Mountaineering Trust.
For wildlife books I find that the Christopher Helm, Poyser and Pica Press publications are invaluable. These are all imprints of A&C Black, and their website gives full details: www.acblack.com/christopherhelm.
For the islands of Scotland the only book worth considering is The Scottish Islands by Hamish Haswell Smith, published by Canongate: www.canongate.net.
Books on mountain safety run into the hundreds, but best of all are:
Mountaincraft and Leadership, Eric Langmuir (The Scottish Sports Council and the Mountain Leader Training Board, 1995)
Mountain Skills Training Handbook, Pete Hill and Stuart Johnston (David & Charles, 2004)
Wild Camping, Kevin Walker (Constable, 1989)
Mountain Hazards, Kevin Walker (Constable, 1988)
