Use the IGN Series 1:25,000, available at bookshops in the area. Also very useful is the map Caroux et Bord Oriental de l’Espinouse, by David Mazet, which shows all the mountain paths and peaks in much greater detail. For touring, the IGN 1:100,000 Béziers/Montpellier map is excellent.
